Ingredients

  • 1 cup Unsalted Butter (softened)
  • 3/4 cup Sugar
  • 3/4 cup Brown Sugar packed
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1-1/2 cups Whole Wheat Pastry Flour or Organic Whole Wheat Pastry Flour
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1-3/4 cups Honey Almond Granola
  • 1/2 cup Dried Blueberries
  • 1/2 cup Diced Apples
  • 1/2 cup Hazelnuts chopped

Instructions

  1. Preheat oven to 350°F. Grease cookie sheets.
  2. In a medium bowl, cream together the butter and brown and white sugars. Beat in the egg and vanilla.
  3. Combine the flour, salt and baking soda, stir into the creamed mixture.
  4. Finally, stir in the granola, dried fruits and nuts.
  5. Drop by heaping teaspoonfuls onto the greased cookie sheets, about 2 inches apart.
  6. Bake 12 - 15 minutes until cookies are lightly browned around the edges. Remove cookies to wire racks and allow to cool completely.
