Healthy Fiber Muffins

These muffins are so full of fiber all you need is one a day; even my teen daughter loves them! I freeze them and take a few out at a time. Sometimes I double the recipe. This recipe was not tested by Bob's Red Mill.

Ingredients

  • 3/4 cup Whole Wheat Pastry Flour or Organic Whole Wheat Pastry Flour
  • 1/4 cup Millet Flour
  • 1/4 cup Organic Buckwheat Flour
  • 1/4 cup Soy Flour or Organic Soy Flour
  • 3/4 cup Organic High Fiber Hot Cereal
  • 1/4 cup Flaxseed Meal
  • 1/4 cup Wheat Bran
  • 1/4 cup Wheat Germ
  • 1/2 cup Evaporated Cane Sugar
  • 2 tsp Baking Powder
  • 1 tsp Ground Cinnamon
  • 1 tsp ground allspice or nutmeg and ginger (ground)
  • 1 tsp Baking Soda
  • 2/3 cup Banana mashed
  • 1 cup Yogurt plain nonfat
  • 2 Eggs
  • 1/4 cup Blackstrap Molasses
  • 1/4 cup Agave Nectar or Honey
  • 4 Tbsp Canola Oil
  • 1/2 cup Apple peeled & shredded
  • 1/2 cup Carrots shredded
  • 1 1/2 cups Raisins, Chopped Nuts, Coconut (shredded) or small Chocolate Chips

Instructions

  1. Sift all dry ingredients.
  2. Mix wet ingredients.
  3. Stir wet ingredients with dry by hand! Fold in the apple and carrots.
  4. Stir in your choice of mix-ins. (I like to use 1 cup chopped roasted pecans and 1/2 cup raisins or chopped dried cherries).
  5. Spray muffin tins, fill 3/4 with ingredients and bake for 30 minutes in a 375°F oven.
