3/4 cup
Whole Wheat Pastry Flour
or Organic Whole Wheat Pastry Flour
3/4 cup
Oat Bran Cereal
or Organic Oat Bran Cereal
Mix together dry ingredients. Mix wet ingredients in a separate bowl. Combine the two mixtures and stir till moistened. Fold in carrots, dates and walnuts.
Lightly grease or line muffin tin with paper cups and fill 2/3 full. Bake at 400°F for 18-20 minutes.
