We apologize for the confusion! “Potato Flour” and “Potato Starch” are words that are often used interchangeably in recipes, but in our product line, they are two separate products. Our Potato Flour is ground from russet potatoes and has a strong potato flavor so it's often used in soups for flavor and also for thickening. It is also often added to bread recipes to produce a softer texture. Our Potato Starch is made from a different type of potato that is very starchy and only the starch is used after extraction; the starch is extracted and then ground into a fine powder, similar to corn starch. Potato Starch is often used in gluten-free blends. These two products produce different results in baked goods so this is why they can't necessarily be used interchangeably.
Hi! In the paragraph about potato starch, it says "Often, potato starch will be labeled as potato flour." but then later in the section, it says "Potato starch and potato flour cannot be used interchangeably" ...This is very confusing. How would we know if something has been mislabeled? Thank you!
