I have been trying to find a substitute for xanthan gum for keto baking because I hate the slimy texture. Even in baked good, my mouth can detect that awful texture. I tried guar gum in a cookie recipe and didn't notice the sliminess, but I'm not 100% convinced yet. Before I use any more of my keto ingredients (they tend to be a bit pricy), is guar gum known for sliminess, or would it be good to use if you can't handle xanthan gum?

My question is how to use gaur gum in cold liquids. I make popsicles and in order for the gum to break down we have been adding it to heated liquids(dairy, simple syrup ect..) Some recipes require to sit in the frig over night. I have had issues with the gum producing a thick covering after being in the frig 24 hours why is this happening. or is their a special gum that is used for frozen treats that would not have these issues. Any advice would be appreciated. jo

Just used Red Mill guar gum for the first time to thicken a stewed fruit topping and I like it! No need for a fancy mixer: take a long metal spoon with a bit of the dry powder in it, tap the handle on the edge of the pot so that a little bit pops up and gets spread like dust over the surface, and immediately stir it in; repeat as needed. Easy to control the amount -- and no noticeable texture or flavor, as ground flaxseed or cornstarch might have when used as a thickener in the same way.
Can guar gum be used in baked goods such as Keto cinnamon rolls made with coconut flour? The recipe calls for xanthim gum but all I have is guar gum, can be substituted in the recipe? If so what is the conversion and should it be incorporated into the dry ingredients of the dough?
