To make these cookies, begin preheating the oven to 325 degrees. Next, grease three separate cookie sheets with coconut oil and set the sheets aside.
Now, combine the rice milk with one tablespoon of flaxseed meal and set it aside to sit until it forms a gel-like substance.
Add the shortening, raw sugar, brown sugar and lemon juice to a large bowl and mix thoroughly with an electric mixer for 1-2 minutes until the mixture has taken on a creamy texture.
Next, add the premade flaxseed gel, lemon zest, baking soda, baking powder and salt to the mixture. Use the electric mixer for another 15-20 seconds until all ingredients are thoroughly mixed.
Add the oat flour to the other ingredients and mix for 30 seconds at low speed. Then, stir in the oat flakes and mix for another 30 seconds.
Fold the cranberries into the cookie dough carefully until they're are evenly distributed throughout the batter.
