Steps to Create the Base
Preheating the oven to 350F.
Line a large baking sheet with parchment paper.
In a large bowl, combine coconut oil, sugar and egg. Mix using a handheld beater with the setting set to medium-high until all ingredients have combined.
Add flours, cinnamon and salt. Blend until combined.
Press the base down into the pan and pat into an even layer.
Place the base in the refrigerator and allow it to chill for 20-25 minutes.
Steps to Create the Filling
Combine the diced strawberries with sugar and lemon juice for the filling and set aside.

Combine flours, coconut oil, salt and sugar in another large bowl.
Add rolled oats and toss the topping with your fingers until it creates a crumbly texture.
Combine the Layers
Remove chilled base from the refrigerator and add an even layer of the strawberry mixture on top.
Sprinkle the crumble on top of the strawberry filling. Cover the top of the filling evenly, but avoid pressing down on top of it.
Bake for 45-50 minutes until you notice that the top is turning a golden brown and the strawberries are beginning to bubble.
