Leftover Mashed Potato Pierogies

7 Recipes for an Easter Potluck | Bob's Red Mill Blog If you’re looking for an Easter potluck dish that will leave your guests smiling from ear to ear, whip up these tasty Leftover Mashed Potato Pierogies! These are especially useful if you find yourself with some extra mashed potatoes on hand. The idea comes to Bob’s Red Mill from the brilliant Chef Billy Parisi and incorporates Unbleached White All-Purpose Flour, shredded cheddar cheese, mashed potatoes, butter, water and a bit of salt. Serve these delectable morsels with additional cheese on top, chopped bacon, fresh parsley, green onions or whatever you’d like! If you’re looking for other Easter-friendly potato recipes, these Dairy and Gluten Free Scalloped Potatoes are a hit! Scalloped potatoes are popular during Easter holidays, so this particular dish is perfect for a potluck with guests who are dairy and gluten free (although we’re sure it will be enjoyed even by those who aren’t).

Brown Sugar Glazed Carrots

7 Recipes for an Easter Potluck | Bob's Red Mill Blog Brown Sugar Glazed Carrots are a staple for Easter potlucks. These carrots take just 10 minutes to throw together and are made with butter, brown sugar, orange juice, salt, pepper and chopped fresh parsley. If you’re planning to bring more than one dish to your potluck, they pair well with side dishes like mashed potatoes or a big pan of mac and cheese. They taste divine with honey baked ham, too, although chances are your host will have that entree dish covered. If you’re looking for a veggie side dish for the potluck that’s out of the ordinary, consider this recipe for 5 Ingredient Zucchini Fritters. These fritters are crunchy, delectable and super easy to make. During the early springtime, zucchini can be found all over the grocery stores. Pick some up to make this divine potluck dish!

Mini Spring Vegetable Quiches

7 Recipes for an Easter Potluck | Bob's Red Mill Blog When it comes to Easter main dishes and brunch, nothing steals the show like these Mini Spring Vegetable Quiches! Instead of baking her quiche in a pie plate, Sonali Ruder from The Foodie Physician bakes hers in a tart pan (or mini tart pan) with a removable bottom. It makes for a lovely presentation and also makes it easy to get the quiche out of the pan once it’s done baking. Sonali makes her crust with Gluten Free 1-to-1 Baking Flour, salt, coconut oil and milk, and fills it with a mix of spring ingredients like asparagus, leeks, garlic and fresh thyme. The eggs, whole milk and parmesan cheese bring the dish all together and make it a wonderful addition to any Easter potluck. You can also try this simple recipe for Gluten Free Quiche Lorraine. It’s made with Bob’s Red Mill Gluten Free Pie Crust Mix, bacon, milk, cream, eggs, salt and shredded Gruyere cheese. This classic quiche is decadent and creamy, and makes a beautiful addition to any sort of Easter party. If you’d like, you can even bring an assortment of quiches (gluten free, vegetarian, dairy free), so guests can feel free to eat what they’re in the mood for.

Italian Easter Bread Rolls

7 Recipes for an Easter Potluck | Bob's Red Mill Blog Whether you’re venturing to a breakfast, lunch or dinner, these lightly sweetened Italian Easter Bread Rolls are fit for any party! If you’ve had an Easter egg hunt in the morning and are looking for a way to display your treasures, this is the perfect recipe to add to your collection. The rolls are made with warm milk, sugar, salt, yeast, egg, butter, Unbleached White All-Purpose Flour, sprinkles and hard boiled eggs and are easy to toss together before the potluck. They’re so beautiful, in fact, that you just might find your host displays them front and center in the middle of the holiday table. If you’d rather have one large loaf of Easter bread rather than the individual rolls, check out this recipe for Braided Easter Bread. Created by Laura Russell from Make Life Lovely, it’s a masterpiece of dough, sugar, milk and eggs. Express your own artistic touch by decorating your hard boiled eggs however you’d like! Even plain white eggs, as the recipe headnote states, will look lovely.

Italian Easter Pie

7 Recipes for an Easter Potluck | Bob's Red Mill Blog Italian Easter Pie is a classic for the spring holiday season. This pie in particular serves 8-10 people and only takes 15 minutes to throw together. It’s made with Hard Red Wheat Berries, salt, a prepared unbaked pie shell, granulated sugar, eggs and cornstarch — plus a mix of flavors like cinnamon, orange zest, candied orange peel, vanilla extract and orange flower water to tie it all together. The ricotta cheese is the final and very important ingredient that makes this pie truly shine. Although the candied orange peel is optional, it’s definitely an added bonus! Keep in mind that the pie is better when chilled overnight and served at room temperature, so you might want to make it the day before your gathering. For a gluten free version of Italian Easter pie, follow this recipe on our website. It’s a bit different than the recipe above and incorporates ingredients like Sorghum Grain and Gluten Free Pie Crust Mix instead.

Carrot Cake

7 Recipes for an Easter Potluck | Bob's Red Mill Blog Is there anything more quintessentially Easter than a big slice of carrot cake after the meal? This Carrot Cake is absolutely gorgeous and even uses our recipe for Easter French Macarons as a topper to this easy carrot cake. Jacqueline Bruchez from The Seaside Baker brings this simple-to-make carrot cake to life with ingredients like Unbleached White All-Purpose Flour, brown sugar, cinnamon, finely shredded carrots, nuts and more. Her silky cream cheese icing tops things off with softened unsalted butter, cream cheese, powdered sugar and vanilla extract. We love that she decorates with shredded coconut (or edible grass), the speckled macarons and extra Robin's Eggs. Though this is technically an Easter potluck dessert, we don’t see why there’s any reason to not have a slice the next morning alongside a cup of tea or coffee! If it’s a gluten free carrot cake you’re in need of for your Easter potluck, this one from Sharon Lachendro of the What The Fork Food Blog truly does take the cake (the carrot cake, that is). It has that same rich and wonderful carrot cake flavor, just without the gluten or dairy. Sharon packs her cake with carrot, coconut, walnuts and pineapple — so it’s moist and flavorful. We love how she adds a bit of lemon juice to her “cream cheese” frosting, too, to give it a bright and lemony flavor. It tastes just like springtime!

Mac and Cheez

7 Recipes for an Easter Potluck | Bob's Red Mill Blog When it comes to Easter main dishes, macaroni and cheese is wildly popular during Easter. With this Mac and Cheez, you can both surprise and delight your fellow potluck guests. Instead of the usual cheese-filled entree, this gets its delicious flavor from nutritional yeast, cashews and a bit of garlic powder. Top it off with lemon juice and paprika, and you have a mac and cheese fit for even the healthiest or fanciest of Easter gatherings. If you’re not trying to keep this dish vegan friendly, you can even add chopped bacon or sausage for an extra kick. If the idea of bringing pasta to your potluck excites you, you can also go the route of homemade pasta, which is sure to impress the guests! Bob’s Basic Pasta Recipe is made with just four ingredients — Semolina Pasta Flour, eggs, water and olive oil. It’s easy to make and a fun Easter tradition to start for the whole family. Whether you’re going for something fun like our Mac and Cheez or following tradition with an Italian Easter Pie, we hope this list has inspired you to bring something new to the potluck this year!
