2 Tbsp Extra-Virgin Olive Oil, divided
2 lb Chuck Roast
Pinch of Kosher salt
Pinch of Black Pepper
1 yellow Onion
5 cloves of Garlic
1/2 tsp Fennel Seeds
1/4 tsp Red Pepper Flakes
2 Tbsp Tomato Paste
1/4 cup Red Wine
28 oz Whole Peeled Tomatoes
1/4 cup Water
3 sprigs of Thyme
1 Bay Leaf
2 tsp Balsamic Vinegar
Parmesan, for serving
Freshly chopped parsley, for serving
Directions
- Heat 1 tablespoon oil in a large pot over medium high heat.
- Season the chuck roast with salt and pepper, and sear in batches until all sides have browned. This will take approximately 10 minutes.
- Remove the seared chuck roast from the pan and place it into a large bowl.
- Heat the remaining oil over medium heat and add onion. Cook the onion until it's soft (6 minutes).
- Add garlic, fennel seeds and red pepper flakes and continue to cook until fragrant—about 1 minute more.
- Add tomato paste and cook until the mixture has darkened in color.
- Deglaze the sauce with wine, stirring and scraping up any brown bits.
- Add peeled tomatoes, water, thyme, bay leaf, balsamic vinegar and seared chuck roast—season to taste with salt and pepper.
- Stir the ragu and reduce the heat to low.
- Cover the ragu allowing it to simmer, occasionally stirring until the meat can easily be shredded. This process will take 2-2 ½ hours.
- Using a wooden spoon, break up the tomatoes and meat and remove the bay leaf.
- Serve over a large plate of Basic Italian Polenta and top with parmesan.

- 3 Tbsp Unsalted Butter
- 1 tsp Sea Salt
- 2 cups Yellow Corn Polenta

Directions

- Place a large and deep pan over high heat, bringing water and sea salt to boil.
- Gradually stir in the polenta and reduce the heat to a gentle simmer, frequently stirring to prevent sticking.
- Continue simmering the polenta until the mixture is very thick (about 30 minutes).
- Stir in butter, and add additional salt to taste.
- Oil a deep, medium-sized bowl and spoon in the polenta, allowing it to sit for 10 minutes.
- Invert the bowl of polenta onto a flat plate where it will unmold and hold its shape.
- Cut the polenta into thick slices and top with your homemade ragu sauce and freshly grated cheese.
