Baking Instructions

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, use an electric mixer to beat the butter, coconut sugar, almond butter, egg and vanilla extract on medium-high speed until they have thoroughly combined and the batter is smooth.
  3. Add baking soda and salt to the top and slowly begin to add in the almond meal. Set the mixer to a low-speed setting and beat until everything is evenly combined.
  4. Roll in the chocolate chips with a spoon and then scoop out the cookie dough into 2-inch diameter balls. Place on a baking sheet 2 inches apart.
  5. With a spoon or your fingers, lightly press down on the top of the cookie dough balls to flatten them. Sprinkle with salt.
