Best Brownie Making Tips

Cream Cheese Brownie

Want to make sure your brownies turn out just as you'd hoped? Continue reading to learn how you can perfect your next batch of brownies with a few simple tips.

To Make Brownies With a Shiny Top

If you're a brownie connoisseur, you've likely noticed that the best-tasting brownies have shiny, crackly tops. If you're wondering how to achieve this same glossy glaze when making brownies at home, you'll need to pay attention to the sweeteners used. Traditional brownies use one of three types of sweeteners, granulated sugar, brown sugar and corn syrup. Though each of the sugars will result in great-tasting brownies, using granulated sugar will help you achieve the shiny crust you're searching for. When baked, the sucralose in granulated sugars forms a smooth, glasslike and noncrystalline surface that reflects light in a more focused way creating a shiny effect. What's more, as the sugar molecules rise to the surface of the brownie, they dry out during baking and result in a crackly surface.

To Make Chewy Brownies

There's nothing better than a freshly baked chewy brownie right out of the oven. If your last few brownie recipes have been a bit drier than you prefer, then the ratio of saturated fat to unsaturated fat might be off a bit. To create a chewier brownie, try using butter and vegetable oil at a 1:3 ratio. This will help provide the satisfying chew you're looking for without altering the recipe too much.

Make Richer Tasting Brownies

Want to make a brownie that has a rich chocolatey flavor? Choose a recipe that uses cocoa powder. Cocoa powder contains more cocoa solids than unsweetened chocolate and will provide a more chocolatey taste. That being said, we don't recommend using cocoa powder alone to make your brownies. Because cocoa powder is drying, it should be combined with unsweetened or sweetened chocolate to produce a rich flavor without overshadowing the other ingredients in the recipe.

Deepen the Flavor of Brownies

Deepen the flavor of your favorite brownie recipe with a bit of instant espresso powder. Adding a teaspoon or so of espresso powder to your batter can pump up the chocolatey flavor without passing on a strong coffee flavor. If you don't have instant espresso on hand, instant coffee will work just the same.

Use the Right Baking Pan

Most brownie recipes call for an 8 x 8-inch metal baking pan. So what happens if you only have a glass baking dish on hand? While the two can be used interchangeably, the results will differ slightly. Brownies cooked in glass baking dishes tend to be drier than those cooked in metal pans. This is because, even after the dish has been removed from the oven, it continues to cook the brownies with the residual heat leftover. To keep your brownies moist, when using a glass baking dish, remove the brownies from the oven just before the timer is about to go off.

Check Brownies For Doneness

Not sure how to tell if your brownies are done cooking? Overcooked brownies tend to produce a dry and chalky texture with a muted flavor. In comparison, undercooked brownies will turn to mush upon handling. To know if your brownies are ready to be removed from the oven, insert a toothpick into the center of the brownies. The brownies are baked to perfection when the toothpick comes out with a few moist crumbs clinging to it.

Use Leftover Brownies

If you're searching for a way to use up the rest of your brownies before they go bad, turn them into crumbs. Place dry or nearly stale brownies into a food processor and pulse until it forms coarse crumbs. Then store the crumbs in an airtight container in the freezer to use for sprinkling on ice cream and other desserts.

Avoid Overmixing

Though most brownie recipes are relatively simple, one common mistake when baking brownies is overmixing the batter. An overmixed brownie batter will lead to dense and tough brownies. To avoid overmixing your next batch of brownies, mix them with a spoon instead of an electric mixer. Using a spoon will allow you to mix the batter just until the eggs are incorporated. A properly mixed brownie batter will be thick and lumpy, not runny and smooth.

By using the tips, tricks and recipes above, we're confident that every batch of brownies you make from here on will be delicious. By adding just one extra ingredient like cream cheese, you can turn a traditional brownie recipe into the star of the dessert table. Easy to make in large batches, cream cheese brownies are the perfect dessert to make for your next gathering.
