This post is for my oatmeal lovers. Im the girl who could eat oatmeal every meal of the day. Years ago I developed an oatmeal ice cream recipe and as luck would have it, I moved across the country and didnt bring my ice cream maker with me. However, as they say, where theres a will, theres a way! Never underestimate the power of a girl and her cravings for her favorite treats.

Its summertime, its hot, you want a treat, but you also dont want to eat a bunch of junk. This oatmeal granita is exactly what you need. The bigger bonus, you can even have this wholesome treat for breakfast! Oh, how I love it when you can have dessert for breakfast. I also really love the mix of textures in this treat. The cool icy granita, mixed with the chewiness of the oats, the sweetness of summer berries, and the creaminess of the yogurt make this oatmeal granita the perfect summer treat. Also, its so easy to make! I love making a batch on the weekends while Im puttering around the house doing other chores, and then Im set for the week.

This treat is incredibly refreshing, good for you, and has tons of flexibility in flavor options. I like to make it a little less sweet since I will be loading mine up with sweeter toppings. Add more sweetener if you plan to eat it plain or like your treats sweeter. Chocolate, bananas, and peanut butter would be so good . . . yum!

Oatmeal Granita
Makes 7 cups
In a nonstick skillet on medium heat, toast the oatmeal until fragrant and slightly browned, about 5-10 minutes. Next, add the milk, flaxseed meal, sweetener, and salt to the oatmeal and bring to a boil. Reduce the heat and simmer for 5 minutes. Pour mixture into a 9 x 13-inch glass casserole dish and place in the refrigerator for an hour to cool mixture. Then place the oatmeal in the freezer for an hour, scrape the mixture with a fork after the hour. Do this for 4 hours or until the mixture is fully frozen. Store in a sealed container in the freezer. Serve with your favorite toppings.
