Enter microwave mug muffin recipes, which have exploded in popularity in the past few years, in part because you can make a muffin in a mug pretty much anywhere—at work, at the dorm, or even on the road! Chocolate Zucchini Mug Muffin
Ingredients
¼ cup + 1 Tbsp Bob’s Red Mill® Whole Wheat Pastry Flour or Gluten Free 1-to-1 Baking Flour
¼ cup Cane Sugar
1 ½ Tbsp Cocoa
⅛ tsp Baking Soda
⅛ tsp Kosher Salt
3 Tbsp Milk
2 Tbsp Oil
¼ tsp Vanilla Extract
2 Tbsp finely grated Zucchini
1 Tbsp Chocolate Chips
Lemon Poppy Seed Muffin Mug
Ingredients
¼ cup + 1 Tbsp Bob’s Red Mill® Whole Wheat Pastry Flour or Gluten Free 1-to-1 Baking Flour
¼ cup Cane Sugar
⅛ tsp Baking Soda
⅛ tsp Kosher Salt
⅛ tsp Lemon Zest
½ tsp Poppy Seeds
3 Tbsp Milk
2 Tbsp Oil
1 ½ tsp Lemon Juice
⅛ tsp Almond Extract
Salted Date & Bran Mug Muffin
Ingredients
¼ cup + 1 Tbsp Bob’s Red Mill® Organic Whole Wheat Pastry Flour
1 Tbsp Bob’s Red Mill® Wheat Bran
¼ cup Cane Sugar
⅛ tsp Baking Soda
⅛ tsp Kosher Salt
¼ tsp Cinnamon
Pinch of ground Cloves
3 Tbsp Milk
2 Tbsp Oil
½ tsp Molasses
¼ tsp Vanilla
2 Tbsp chopped Dates
Instructions
Mix together dry ingredients in a large mug, creating a well in the middle.
In another bowl, combine wet ingredients. Pour the wet ingredients into the dry ingredients and mix until batter comes together. If you have any add-ins like chocolate chips, dried fruit, nuts or frozen berries, fold them in now.
Place a napkin under your mug in case there is any overflow and place in the microwave. Microwave each mug for 3 minutes. Remove from microwave and let cool for 1–2 minutes before eating.
