2 Tbsp finely grated Zucchini
1 Tbsp Chocolate Chips

Ingredients
cup + 1 Tbsp
Bobs Red Mill Whole Wheat Pastry Flour or
Gluten Free 1-to-1 Baking Flour

Cane Sugar

Baking Soda
tsp Kosher Salt

tsp Poppy Seeds
3 Tbsp Milk
2 Tbsp Oil
1 tsp Lemon Juice
tsp Almond Extract
Salted Date & Bran Mug Muffin
Ingredients
cup + 1 Tbsp
Bobs Red Mill Organic Whole Wheat Pastry Flour
1 Tbsp
Bobs Red Mill Wheat Bran
cup
Cane Sugar
tsp
Baking Soda
tsp Kosher Salt
tsp Cinnamon
Pinch of ground Cloves
3 Tbsp Milk
2 Tbsp Oil
tsp Molasses
tsp Vanilla
2 Tbsp chopped Dates
Instructions
Mix together dry ingredients in a large mug, creating a well in the middle.
In another bowl, combine wet ingredients. Pour the wet ingredients into the dry ingredients and mix until batter comes together. If you have any add-ins like chocolate chips, dried fruit, nuts or frozen berries, fold them in now.
Place a napkin under your mug in case there is any overflow and place in the microwave. Microwave each mug for 3 minutes. Remove from microwave and let cool for 12 minutes before eating.
