Truth be told, I love coming up with recipes that can be used for meals or snacks any time of the day. These Paleo Crepes with Fresh Summer Fruit are just that. I'm a huge fan of enjoying summer's finest sweet jewels, and these crepes really highlighted the flavors of the strawberries and blueberries. I won't lie, some vanilla ice cream would have made this over the top as a dessert.
Also, since summer is definitely not the time to crank up the oven, I love being able to throw this batter together and cook off however many crepes I want and then just put the rest of the batter in the refrigerator for later. It makes for a super fast breakfast, snack, or dinner. The paleo flour blend has such a fantastic flavor with just a hint of coconut that makes it incredibly versatile to add your favorite toppings. I think a nice warm lentil curry in the colder months would be amazing on these light, delicate pancakes.

Paleo Crepes with Fresh Summer Fruit
Combine all the ingredients in a bowl. Whisk to combine. Heat a small nonstick skillet on medium heat. Pour a little olive oil in your pan, then scoop 1/4 of batter into the hot pan. Cook until the edges start to lift a bit from the pan and carefully flip to cook the other side.
