I wanted a tasty and nutritious pancake mix made from scratch and this is what I created. This recipe was not tested by Bob's Red Mill. High Fiber, Soy Free.
If possible, grind the Wheat Bran, Wheat Germ, Oat Bran and Corn Grits in a coffee grinder for 15-20 seconds and add to a bowl. If after grinding there is less than 1 cup of pancake mix, add enough Unbleached Wheat Flour or your favorite grain to make 1 cup.
Add baking powder, sugar, salt, and cinnamon and mix.
Add melted butter, egg, milk and vanilla in a separate bowl and beat with a fork. Add to dry ingredients and blend well. Let sit for 10 minutes. If the pancake batter is stiff, add an ounce or two of milk.
Heat a frying pan over medium heat, and add a dollop of canola oil. Spoon 2 Tablespoons of batter into frying pan cooking until the pancake is covered with bubbles. Flip over and cook until golden brown.
