These crunchy, delectable zucchini fritters are delicious--and so easy to make! Shred those late-summer zucchini and mix with egg, spices and flour before frying in oil. Top with sour cream and fresh chives and enjoy!

Sour Cream and Snipped Chives

Instructions
Squeeze as much liquid from the zucchini as possible. Transfer zucchini to a large bowl, along with the whisked egg, cumin, salt and flour, and mix.
Use an ice cream scoop to portion out each zucchini fritter, and set them on a sheet tray lined with parchment paper. Smash them down slightly using the backside of the scooper.
Add some oil to a cast iron skillet over medium heat and fry the fritters until golden brown and cooked throughout, about 10 minutes total.
Serve the fritters with optional sour cream and snipped chives.
