Combine flours, baking powder, baking soda, xanthan gum and cream of tartar in a bowl and whisk to combine.
In a large mixing bowl, beat butter and agave until fluffy. Add egg and almond extract and beat together. Add flour mixture and mix well, then stir in coconut.
Shape dough into balls using a heaping teaspoon, flatten with a fork and bake 10 - 12 minutes at 325°F until golden.
