Ingredients

  • 3 Tbsp Vegetable Oil
  • 1/4 cup Honey
  • 3 Tbsp Water
  • 1/2 tsp Orange's Zest (or Lemon's Zest)
  • 1 cup Organic Amaranth Flour sifted
  • 1/3 cup Arrowroot Starch sifted
  • 1 tsp Baking Powder
  • 1/8 tsp Sea Salt
  • 1/2 tsp Ground Cinnamon
  • 1 tsp Vanilla Extract
  • 1/2 cup Date Pieces
  • 1/3 cup Chopped Walnuts or chopped Pecans

Instructions

  1. Preheat oven to 350°F. Lightly grease a cookie sheet, set aside.
  2. Combine oil, honey, water and orange or lemon peel in saucepan. Heat gently to melt honey and remove from heat to cool.
  3. Sift flours before measuring. Combine dry ingredients and sift again. Stir vanilla into liquids, then add dry ingredients. Fold in dates and nuts.
  4. Drop batter by rounded teaspoon onto prepared cookie sheet.
  5. Bake 12 - 15 minutes, until cookies are golden. Remove to wire rack to cool.



    Makes about 2 dozen.
