Ingredients

  • 2-1/4 cups Oat Bran Cereal or Organic Oat Bran Cereal
  • 1/4 cup Brown Sugar packed
  • 1-1/4 tsp ground Cinnamon
  • 1 Tbsp Baking Powder
  • 1/4 cup Chopped Walnuts
  • 1/4 cup Raisins
  • 1/2 cup Nonfat Milk
  • 3/4 cup Apple Juice (frozen concentrate)
  • 2 Egg Whites large
  • 2 Tbsp Canola Oil
  • 1 Apple medium-sized, peeled, cored and finely chopped

Instructions

  1. Preheat oven to 425°F. Lightly grease muffin tins or use paper liners; set aside.
  2. Mix the dry ingredients in a large bowl. Mix the milk, apple juice concentrate, egg whites and oil in a bowl or blender. Add to the dry ingredients and mix. Fold in the chopped apple.
  3. Fill muffin tins with batter divided equally. Bake for 17 minutes. After cooling, store in a large plastic zip lock bag to retain moisture and softness.



    Makes 12 muffins.
