Apple Cinnamon Muffins (Gluten Free, Paleo)

Instructions

  1. Preheat oven 350°F. Prepare a muffin tin with muffin liners or cooking spray.
  2. In a medium bowl, sift together the dry ingredients until well incorporated.
  3. In a separate large bowl, whisk together egg whites, honey and coconut oil.
  4. Then add dry ingredients to the wet ingredients and stir just until combined. Do not overstir.
  5. Fold in the apples.
  6. Scoop the batter into the muffin cups filling 3/4 of the way full. I used my finger to smooth the edges so the muffins would puff nicely.
  7. Bake 22-25 minutes until muffins are golden brown. Remove from the oven and transfer to a wire baking rack to cool.
