Apple Cinnamon Teff Waffles

These were really easy and super delicious...I impressed myself!!! This recipe was not tested by Bob's Red Mill. Whole Grain! High Fiber, Lactose Free, Low Fat, Soy Free, Vegan.

Ingredients

  • 1 cup Teff Flour
  • 1 cup Organic Spelt Flour
  • 2 Tbsp Sucanat (or dry sweetener of choice)
  • 4 tsp Baking Powder
  • 2 tsp Baking Soda
  • 2 Tbsp Flaxseed Meal
  • 1 to 2 tsp Ground Cinnamon
  • 2 cups Apple Cider
  • 1/2 to 3/4 cup Coconut Yogurt
  • 1/2 cup Applesauce

Instructions

  1. Preheat waffle iron.
  2. MIix the dry ingredients together...stir well.
  3. Mix the wet ingredients together in a separate bowl...stir well.
  4. Add the wet ingredients to the dry ingredients. Stir until combined.
  5. Using a spray oil, generously spray the heated waffle iron. Put 1/2 cup of batter into the waffle iron, and bake til done. Enjoy with your favorite topping.
