Bacon, Goat Cheese and Mixed Greens Flatbread
There is something enormously comforting about a fluffy-on-the-inside, crispy-on-the-outside crust covered in melted cheese and flavorful toppings. This delicious flatbread is also easy to make and easy to serve: a great appetizer or light main course!

Mixed Greens
tossed lightly with olive oil, salt and pepper

Instructions
Combine the warm water, yeast and pinch of sugar in a bowl. Stir and let sit for about 5 minutes to allow the yeast to bloom.
While you are waiting, cut the bacon into 1 inch pieces and cook until crispy.
Next, add the flour and pinch of salt to the water and yeast mixture about a half cup at a time, and knead until the dough is no longer sticky.
Cover the bowl with a damp cloth and set aside for a few hours to rise. The dough should double in size.
When you are ready to cook your flatbread, remove the dough from the bowl and flour a cutting board big enough to roll the dough out on. Go ahead and preheat your oven to 450°F.
Put the baking sheet in the oven so it can preheat as well. A hot pan means your dough won't stick and gets the bottom nice and crusty without the top burning.
Roll the dough to desired thickness.
Place the dough on your hot pan and bake 5 minutes.
Remove the par baked dough from the oven and top with crumbled goat cheese, cooked bacon and freshly grated Parmesan cheese.
Bake another 5-10 minutes, until the crust is crispy and the cheese is just starting to brown.
Top with the seasoned mixed greens and sliced green onions.
