Preheat oven to 350°F. Spray a muffin tin or line with paper liners.
Mix together Bob’s Red Mill Organic Ivory Wheat Flour, sugar, baking powder, baking soda and salt.
In a smaller bowl, combine mashed bananas, egg and melted butter. Add banana mixture to flour mixture and fold to incorporate then fold in walnuts. Do not overmix.
Portion batter into prepared muffin tin and bake until the tops spring back when lightly touched, 25 – 30 minutes.
