Tri-color pearl couscousare delightfully nutty, chewy balls of toasted semolina flour. This versatile alternative to pasta or rice is excellent in salads, or top with your favorite pasta sauce.
If desired, toast the couscous in butter or oil for 3–5 minutes over medium heat before cooking. Bring water to a boil. Add couscous and salt. Return to a boil, then reduce heat to a simmer, cover and cook until tender, about 15 minutes. Drain off any remaining water.
