BBQ sauce on pizza has become a new American classic. This paleo version marries the smoky sweetness of barbecue with creamy cashew sauce and the kick of red onion and cilantro to create a super flavorful, quick and easy lunch or dinner. Not paleo? No problem! Use your favorite pizza crust recipe. Vegan? Great! Swap out the chicken breast with one of the great vegan alternatives. However you make it, this pizza is bomb.

Ingredients

  • 2 recipes Paleo Pizza Crust from Paleo Baking Flour
  • 1 cooked Boneless, Skinless Chicken Breast (4-5 oz)
  • 1 cup BBQ Sauce divided (make sure the ingredients conform to your diet)
  • 1/2 recipe Cashew No-Cheese Sauce
  • 1/2 cup thinly sliced Red Onion
  • 1/4 cup chopped Cilantro

Instructions

  1. Preheat oven to 350°F and set aside two round pizza pans lined with parchment paper.
  2. Prepare the pizza crust dough according to the recipe. Divide the dough in half and shape onto the prepared pizza pans. Par-bake crusts in the preheated oven for 7 minutes.
  3. While the crusts bake, shred the chicken breast into bite-size pieces and toss with 2 tablespoons BBQ sauce. Set aside.
  4. Remove the pizza crusts from the oven. Divide the remaining BBQ sauce between both crusts and spread evenly over the top.
  5. Drizzle the cashew no-cheese sauce over the pizza crusts then top with shredded chicken and red onion.
  6. Return the pizzas to the hot oven and bake for another 7-8 minutes.
  7. Remove pizzas from the oven and sprinkle with chopped cilantro. Slice and serve!
