Preheat oven to 325°F. Line a 12-cup muffin tin with paper liners.
In a large bowl whisk together eggs, milk and oil until well combined.
Add cake mix and stir until batter comes together. Evenly divide mixture in the prepared muffin tin.
Bake for 20–25 minutes, until the tops bounce back to touch. Let cool completely. If desired, cut a small 1-inch-deep well in the center of each cupcake and fill with 1 tablespoon cherry jam.
Frosting
In a large mixing bowl beat butter, sugar, vanilla and salt until fluffy, 8–10 minutes. Add cream and beat until incorporated.
Transfer frosting to a piping bag fitted with a star tip attachment. Pipe a dollop of frosting onto each cupcake.
