Heat oven to 350°F. Lightly coat muffin tins with spray oil.
In a mixing bowl, combine dry ingredients (Low Carb Baking Mix, baking powder and sweetener). Make a well in the center of dry ingredients and add the eggs, water, oil and vanilla. Mix with a fork or whisk until just blended. Take care not to overmix.
Divide batter into 8 muffin tins. Bake 22-25 minutes. Serve warm with your favorite butter or cheese.
