Set aside 2 tablespoons of brown sugar. Add the remaining ingredients to your bread machine pan according to your bread machine recommended order. Set machine on "dough" cycle.
When cycle has finished, turn dough onto a lightly floured board. Divide into two halves or leave as one large loaf. Lightly knead and shape each piece into a boule, or round ball. Place dough onto a parchment paper-lined baking sheet. Let rise, uncovered, for about an hour, until dough is soft and springy.
Place a baking tile on lower oven rack. Preheat oven to 350°F. Slash loaves in a criss-cross pattern. When oven is ready, slide parchment paper and loaves onto baking tile. Bake for about 30 minutes (40 minutes for one large loaf) until loaves are golden brown and sound hollow when tapped.
Transfer loaves to cooling rack. Immediately rub reserved brown sugar over the tops. Cool completely.
