These delicious “brownies” are actually blondies, submitted by Susan L., who shared, “I learned to make these butterscotch brownies in high school, and they have always been a favorite comfort food. Over the years, I have upgraded them with whole wheat flour and a little sea salt. They are loved by my son and many friends.”
Preheat oven to 350°F; butter an 8-inch square baking pan.
Mix brown sugar and melted butter; let cool 5 minutes. Add egg and vanilla and mix until smooth. Add flour, baking powder and salt and stir well, then fold in chopped nuts or coconut.
Spread batter into prepared pan and bake until a tester inserted in the center comes out mostly clean, 20–25 minutes. Sprinkle with large flake sea salt immediately after removing from the oven. Let cool at least 10 minutes before cutting and serving.
