Place warm water and honey in a large mixing bowl. Sprinkle yeast over the mixture and let sit for 5 minutes while the yeast activates.
Add the remaining ingredients to the yeast mixture and mix until a dough forms. Drizzle dough lightly all over with oil, then cover and let rise until almost doubled in size, 30-45 minutes. Meanwhile, place a baking stone in the oven (if available) and preheat to 425°F.
Generously oil two 12-inch pizza pans with oil. Divide dough in half and shape each half into a large disk, placing one disk on each prepared pan. Using lightly oiled hands, spread and shape the dough to fit each pan. Pinch the edges up into a crust, if desired.
Parbake each crust for 10-12 minutes, until lightly browned. Remove from oven and top with toppings of choice then return to the oven to finish baking, 4-6 minutes longer.
