Combine cherries, dates and water. Soak until soft, about 10 minutes.
Meanwhile, line a 9 x 5-inch loaf pan with plastic wrap or waxed paper.
Drain the water off the soaked fruit.
Place the fruit, hazelnut meal, cinnamon, salt, almond extract and chopped hazelnuts in a food processor. Process until well combined, about 1 minute.
Transfer the mixture to the prepared pan. Cover with a piece of plastic wrap or waxed paper and press down to flatten to a smooth, even thickness. Refrigerate for at least 30 minutes.
