Ingredients

  • 2 cups Water (480 mL)
  • 1 cup Protein Oats
  • OR Organic Protein Oats (144 g)
  • ¼ tsp Salt
  • 2 Eggs (100 g)
  • 2 tsp Oil
  • 2 Tbsp chopped Green Onion (12 g)
  • 1 tsp Sesame Oil
  • Chili Crisp and Sriracha to taste

Instructions

  1. Bring water to a boil in a medium saucepan and add oats and salt. Cook for 15 minutes over medium-low heat, stirring often.
  2. When there are 5 minutes left in the oat-cooking time, preheat a nonstick skillet, add oil and cook eggs to desired doneness (sunny side-up eggs are great here).
  3. Divide cooked oats evenly between two bowls. Top each with an egg, chopped green onions, a drizzle of sesame oil, chili crisp and sriracha.
