Spanish Chorizo
(peel off the skin and chop as small as you can)

Cheddar Cheese
grated (or similar cheese)

beaten plus Milk to make 120 mL of liquid
Salt and Pepper

Instructions
Preheat oven to 400°F/200°C/gas mark 6.
Put flour, baking powder, xanthan gum and butter into a bowl and rub in until it loooks like rought breadcrumbs.
Add the chorizo, salt and pepper to taste and about 70g of cheese. Stir in enough of the liquid to make a soft dough.
Knead lighly on a floured worktop to form a smooth ball and then roll out into a square shape. Cut into nine pieces and form each piece into a round shape, about 1 cm deep.
Put scones onto a preheated baking tray. Brush with a little milk if desired. Scatter with the remaining grated cheese.
Bake in the centre of the oven for about 15 minutes until golden and when tested with a skewer it comes out cleanly.
