Instructions
Coconut Amaranth Porridge
In a small saucepan, combine the coconut milk, water, amaranth, maple syrup and salt. Bring to a boil, whisking until smooth.
Cover, reduce heat and simmer until water is absorbed, about 10 minutes.
Spiced Apple and Date Compote
In a small saucepan, combine the remaining ingredients. Bring the mixture to a boil, cover and cook over medium heat for 15 to 20 minutes, or until apples are soft.
Remove from the heat and allow to cool, then mash with a fork or run through a food processor or ricer.
