Ingredients

Coconut Amaranth Porridge
Spiced Apple and Date Compote
  • 1 cup chopped Apple , a softer variety like Gala or Jazz
  • 6 Dates
  • 1/2 cup Water
  • 1 Tbsp Butter
  • 1 small Cinnamon Stick
  • 1 whole Clove
  • 1 Star Anise
  • Pinch Salt

Instructions

Coconut Amaranth Porridge
  1. In a small saucepan, combine the coconut milk, water, amaranth, maple syrup and salt. Bring to a boil, whisking until smooth.
  2. Cover, reduce heat and simmer until water is absorbed, about 10 minutes.
Spiced Apple and Date Compote
  1. In a small saucepan, combine the remaining ingredients. Bring the mixture to a boil, cover and cook over medium heat for 15 to 20 minutes, or until apples are soft.
  2. Remove from the heat and allow to cool, then mash with a fork or run through a food processor or ricer.
