Ingredients

  • 3 Eggs
  • ¾ cup Milk or Water
  • ⅓ cup Oil
  • 1 package Classic Yellow Cake Mix
  • 3 Tbsp Rainbow Sprinkles, plus more to decorate
  • 1 cup unsalted Butter, room temperature
  • 4 cups Powdered Sugar, sifted
  • 3 Tbsp Heavy Cream
  • 1 tsp Imitation Vanilla Extract
  • 1 pinch Salt
  • Food Coloring, optional

Instructions

  1. Preheat the oven to 325°F. Line a 12-cup muffin tin with paper liners. In a large mixing bowl whisk together eggs, milk and oil until well combined. Add cake mix and stir until batter comes together. Fold in the sprinkles.
  2. Evenly divide batter amongst the prepared muffin cups. Bake until the top bounces back to touch, about 20 minutes. Let cool completely as you prepare the frosting.
  3. Cream butter. Add powdered sugar, heavy cream, vanilla, salt and food coloring. Beat until light and fluffy. Transfer to a piping bag fitted with a large star tip.
  4. Pipe a generous dollop of frosting onto each cupcake. Finish with sprinkles and enjoy!
