Place 1 cup rolled oats, the figs, oil and the dates in a food processor and blend. Add the defrosted can of apple-cherry juice and continue to blend until just smooth.
In a large bowl, combine the 10 grain flour, walnuts, sunflower seeds, coconut, spices, xanthan gum, remaining 2 cups rolled oats, 5 Grain Rolled Cereal, golden raisins, dried plums and wheat germ. Add the contents from the food processor and mix by hand to combine. If mix is too dry to form a ball, add water.
Press the mixture loosely into a large lightly greased 11 x 17-inch nonstick baking pan. Bake at 300°F for 20 minutes and turn mixture over and you can begin crumbling it. Bake for 15 minutes more, or until it reaches your desired crispiness. Remove from oven and cool slightly and crumble more for granola.
For Granola Bars:
Pack the mixture more tightly into the baking pan and just turn over mixture after 20 minutes, for equal baking on both sides. Cool completely and cut into bars.
