Cranberry Lemon Bars

Ingredients

Instructions

  1. Preheat oven to 325°F.
  2. Line a 9 x 9-inch baking dish with foil and spray with pan spray.
  3. Sift flour, salt and baking powder. Set aside.
  4. Melt white chocolate and butter in microwave for 15-30 seconds. Stir until free of lumps.
  5. In a large bowl, mix sugar, lemon juice, zest, white chocolate mixture and eggs.
  6. Mix in dry ingredients.
  7. Pour batter into prepared pan. Arrange cranberries evenly into batter.
  8. Bake for 35-40 minutes, or until a toothpick can be inserted and removed clean.
  9. Allow to cool. Remove foil and bars from pan. Peel away foil, then dust bars with powdered sugar.
  10. Cut into bars and serve.
