Place rinsed Bob’s Red Mill Cannellini Beans, salt and water in a medium pot. Cover and bring to a boil. Reduce heat to medium-low and simmer until beans are soft, 60 – 90 minutes.
Remove beans from heat and strain, reserving cooking liquid.
In a food processor or blender, combine beans, rosemary, garlic, balsamic vinegar, and olive oil. Process until smooth, adjusting consistency with reserved cooking liquid as desired.
