Instructions

  1. Whisk together the dry ingredients in a medium bowl. In a separate bowl, mix the egg, soy milk and applesauce to combine. Stir the wet ingredients into the dry and let stand 2 minutes. Spoon batter onto a hot waffle iron that has been brushed with coconut oil and bake according to waffle iron instructions. Makes 8 square waffles.
