Easy Cake Mix Snickerdoodles

These classic cookies are a snap to make with our Gluten Free Vanilla Yellow Cake Mix. Recipe by Tony Shasteen.

Instructions

  1. Preheat oven to 350°F. Line two sheet pans with parchment paper and set aside.
  2. In a large bowl, combine cake mix, oil and eggs. Mix well.
  3. In a small bowl, combine sugar and cinnamon.
  4. Scoop and roll cookie dough into 1-tablespoon balls, then roll in cinnamon sugar and place about an inch apart on prepared pans.
  5. Bake 10–12 minutes, or until cookies are golden brown around the edges, rotating the pans halfway through. Cookies will look slightly under baked, but will set up as they cool.
  6. Let cool for 15 minutes on the pans, then cool completely on a wire rack.
