These burgers are so good and so easy. It's also an easy recipe for using what you have on hand—if you don't have quinoa in your pantry, you can use all oatmeal, and/or use all regular rolled oats or quick cooking oats if needed.
Two 14.5 oz cans
Diced Tomatoes, undrained

Instructions
Preheat the oven to 350°F. Line two large sheet pans with parchment paper.
Place half the beans, half the rolled oats, half the quick cooking oats, half the quinoa and half the tomatoes in a food processor fitted with a blade attachment. Blend until this mixture becomes a paste.
Next, place the mixture and remaining ingredients in a large bowl. Stir to mix well.
To make the burgers, scoop about ½ cup bean mixture onto the parchment-lined sheet pans. Do this gently and lightly press them with wet fingers to form into a burger patty shape.
Bake burgers for 30 minutes, then flip and bake an additional. 25-30 minutes until firm. Allow to cool slightly on the sheet pan. Serve warm.
