Ingredients
2 cups
Organic Red Quinoa
cooked and cooled
1 1/2 cups
Yellow Corn Kernels
fresh or frozen
1 1/2 cups
Lima Beans
fresh or frozen
1 cup
Queso Fresco
or Goat Cheese crumbles
1/2 cup
Red Onion
diced
1/2 cup
Cilantro
chopped
2 Tbsp
Extra Virgin Olive Oil
2 Tbsp
Lime Juice
1 Tbsp
White Wine Vinegar
1/2 tsp
Salt
1/4 tsp
Black Pepper
Instructions
Combine quinoa, corn, lima beans, cheese, onion and cilantro in a large bowl.
In a small bowl, whisk well together oil, lime juice, vinegar, salt and pepper. Pour over salad and mix well.
