This is a recipe for Farinata which is a type of flatbread. It's simple and very versatile! This can be eaten with sliced figs or dates and parmesan, olives or try putting a slice on top of a piece of pizza. This recipe was not tested in the Bob's Red Mill kitchen but was submitted by a customer who wanted to share a recipe they enjoyed with others.
Mix together the flour, cheese, salt and 3 tablespoons of olive oil in a medium size bowl. Add 1 3/4 cups of water and mix well. Cover the mixture so it absorbs water for about 30 minutes.
Add the remaining 4 tablespoons of olive oil in a fairy deep pizza pan (such as a 8x12-inch casserole pan) and put inside oven.
In the meantime, add remain 1/4 cup of water the flour mixture and stir until incorporated. More water may need to be added to get to pouring consistency. Add the pepper to taste.
Remove baking pan from oven and immediately pour batter into pan. Place back in oven for about 10 minutes until it's golden. Remove and slice to your liking. Makes 20 servings.
