Farro, an ancient relative of modern day wheat, gives this dressing a terrifically chewy texture and nutty flavor. This Farro Apple Dressing is a deliciously impressive dish!
Place farro and 1/4 teaspoon salt in a pot with enough water to cover. Bring to a boil, then reduce heat to medium-low and simmer for about 30 minutes. Drain well. Set aside.
While farro cooks, preheat oven to 350°F.
Heat olive oil in a medium skillet. Add onion and sauté until just beginning to soften, about 5 minutes. Add apples and cook until the apples begin to release their juices, about 5 minutes more. Remove from heat and set aside.
Add the apple mixture, rosemary, 1/4 teaspoon salt, black pepper, and eggs to the cooked farro and stir well to incorporate. Place farro mixture in an 8 x 8-inch square baking pan and spread evenly. Pour vegetable broth over the top.
Bake until broth has been absorbed and dressing has set, 35-40 minutes.
