These versatile flatbread can be enjoyed in many different ways. Bake them in the oven, cook on the grill, and enjoy as-is or with your favorite toppings.
Combine flour, yeast, salt, water and oil in a large mixing bowl and mix until a rough dough forms. Transfer dough to a very lightly floured work surface and knead until smooth, about 5 minutes. Place dough in a lightly oiled bowl, turning to coat all sides, then cover and let rise until puffy, about 1 hour.
Preheat oven or grill to 500°F. If baking in an oven, lightly oil two baking sheets and set aside. Divide dough into four equal pieces. Roll each piece very thin and into desired shape. If baking in an oven, place flatbreads on prepared baking sheets (add toppings, if desired), and bake until edges are beginning to brown, 10–13 minutes.
If grilling, brush one side of flatbreads lightly with oil. Place oiled side on hot grill and cook until set, about 3–5 minutes. Lightly brush second side with oil, then flip (add toppings, if desired) and grill 1–2 minutes more or until toppings are to desired consistency.
