Frosted Sugar Cookie Bars (gluten free)

Ingredients

Cookies
Frosting
  • 1 cup Unsalted Butter
  • 4 cups Powdered Sugar
  • 1/2 tsp Vanilla Extract
  • Food coloring of choice, optional
  • Rainbow Sprinkles for decorating

Instructions

  1. In the bowl of a stand mixer cream together butter and sugar. Add egg and vanilla and mix well, scraping down sides of the bowl.
  2. Sift in flour and baking powder and mix until combined.
  3. Press dough into an even layer in a 9 x 13-inch baking dish lined with parchment paper.
  4. Bake at 325°F for 20 minutes. Allow to cool completely before frosting.
  5. To make frosting whip butter in a stand mixer until pale yellow, about 5 minutes.
  6. Add powdered sugar 1/2 cup at a time, mixing well after each addition until completely incorporated.
  7. Add food coloring, if desired, and mix well until color is completely incorporated.
  8. Spread over cooled cookies and add sprinkles immediately to wet frosting.
