Ingredients

  • 1/2 cup Brown Sugar
  • 2 tsp Cinnamon
  • 2 cups Gluten Free 1-to-1 Baking Flour
  • 3/4 cup Sugar
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 Egg
  • 1 cup Milk or Dairy Free Milk alternative (soy, almond or hemp)
  • 1 Tbsp Apple Cider Vinegar
  • 2 cups diced Apple 2 small or 1 large
  • Sparkling Sugar for sprinkling on top

Instructions

  1. Preheat oven to 350°F. Coat three 5.75 x 3.35 x 2.25-inch mini loaf pans or one 9 x 5-inch loaf pan with olive oil spray.
  2. In a small bowl, combine the brown sugar and cinnamon. Set aside.
  3. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt; mix well. Next add the egg, milk and apple cider vinegar to the dry mixture. Whisk just until combined. Scoop a little batter into the bottom of the prepared loaf pan (or pans if using the small pans). Distribute some apple, then sprinkle a little of the brown sugar on top of the apples and repeat ending in the batter. Evenly sprinkle the loaf with the coarse sugar.
  4. Bake for 35-40 minutes for mini loaves, 50-60 minutes for a large loaf or until a toothpick inserted in the center comes out mostly clean with a little bit of gooeyness on it. You can remove the bread from the pan after it has cooled for about 10 minutes or leave it in the pan and give it as a gift.
