These Gluten Free Strawberry Pistachio Brownies combine some of our favorite things- fresh strawberries, pistachios, and chocolate- amazing! They're also gluten free (our Unbleached White All Purpose can be used instead if preferred) and super easy to make!
1/2 cup
Pistachios
chopped, plus 2 Tablespoons for topping

washed, dried, hulled, sliced in half, then fanned
Flaked Sea Salt
optional, for sprinkling before baking
Instructions
Preheat oven to bake at 375°F. Butter an 8x8" baking dish, line with parchment, then butter the parchment. Set aside.
Add sugar and melted butter into a bowl. Whisk until fully incorporated. Add eggs and vanilla.
In a separate bowl, whisk together flour, cacao powder, baking powder and salt, then add to wet ingredients. Mix with a spatula until fully incorporated.
Fold in the chocolate chips and pistachios; gently spread the mixture into the prepared dish, then place the strawberries - evenly spacing them in rows across and down.
Sprinkle the additional pistachios over the batter, along with a bit of pure flake sea salt.
Bake for 35 minutes. If using our Unbleached White All Purpose Baking Flour, the bake time will be closer to 30 minutes.
