Gluten Free Strawberry Shortcake

This delicious strawberry shortcake is made with Gluten Free 1-to-1 Baking Flour and comes to us from Julie Stoner of Stoner Family Farm!

Ingredients

  • ½ cup Butter (softened (113 g)
  • ¾ cup Sugar (150 g)
  • 1 Egg
  • 1 ½ tsp Vanilla
  • 2 cups Gluten Free 1-to-1 Baking Flour (296 g)
  • 2 ½ tsp Baking Powder
  • ½ tsp Salt
  • 1 cup Milk (237 mL)
  • 1 lb Strawberries, mashed (454 g)
  • 1 cup Heavy Cream, whipped (optional) (237 mL)

Instructions

  1. In a kitchen mixer with the paddle attachment, cream butter and sugar. Add egg and mix well. Add vanilla.
  2. In a separate small mixing bowl combine flour, baking powder and salt.
  3. Add the flour mixture and milk alternately.
  4. Pour into a greased 8 x 8-inch baking dish and bake at 350°F for 25 minutes or until the top is golden brown.
  5. Cool completely and serve with strawberries and whipped cream.
