Grain Free Fruit Pizza

Ingredients

Crust
Frosting
  • ½ cup Cream Cheese or Dairy Free Cream Cheese (114 g)
  • 2 cups Powdered Sugar or Sugar Free Equivalent (we used Lakanto) (240 g)
  • 1 tsp Vanilla Extract
Toppings
  • Strawberries, sliced in half
  • Clementines, peeled and sectioned
  • Pineapple, cut into chunks
  • Kiwi, peeled and sliced in half
  • Blueberries
  • Purple Grapes

Instructions

  1. Preheat oven to 400°F; oil a pizza pan or baking sheet, or line with parchment paper.
  2. Mix together eggs, oil, water and bread mix in a large bowl. Let sit for 5 minutes.
  3. Place dough in the center of the prepared pan. Use wet hands to press dough into an 8–10-inch pizza crust.
  4. Bake 15-20 minutes or until lightly browned. Remove from the oven and allow to cool completely before topping.
  5. Place cream cheese, powdered sugar and vanilla in a medium bowl. Whip cream cheese mixture until it’s smooth and all of the sugar is fully incorporated. Refrigerate until ready to use.
  6. Once cooled, evenly smooth ream cheese frosting over the entire pizza crust to the edges.
  7. Layer fruit from the outside going in, starting with strawberries, then clementine pieces, next pineapple, then kiwi, blueberries, and then grapes in the center. Serve immediately or place in the refrigerator for later.
